Vietnamese Chicken and Cheese Banh Mi Sandwich

Difficulty Level: Intermediate

Ingredients:

  • 1/4 cup carrots, shredded
  • 1/4 cup fresh cilantro, minced
  • 1/4 cup cucumber, chopped
  • 1 tbsp jalapeno pepper, finely chopped
  • 2 tsp soy sauce
  • 1 tsp lime juice
  • 1 tsp rice vinegar
  • 2 tbsp softened Wisconsin cream cheese
  • 1 tbsp green onion, chopped
  • 1 tbsp fresh basil, minced
  • 1/2 tsp sriracha hot chili sauce
  • 1 soft baguette or hoagie roll (6 inches)
  • 1 cup shredded, cooked chicken
  • 2 slices (1oz. each) Buholzer Brothers® Muenster Cheese

Directions:

  1. Heat oven to 350 degrees F.
  2. Combine the carrots, cilantro, cucumber, jalapeno, soy sauce, lime juice, and rice vinegar in medium bowl. Set aside.
  3. Stir the cream cheese, green onion, basil, and hot chili sauce in another bowl.
  4. Wrap baguette in a piece of aluminum foil. Bake for 5 minutes or until warmed. Cool slightly; cut lengthwise.
  5. Spread cut sides with cream cheese mixture. Top baguette bottom with chicken, muenster, and vegetable mixture. Replace baguette top.
