Cheesy Stuffed Chicken- Muenster

  • 2 large chicken breasts
  • 1 lb of spaghetti
  • 1 24oz jar pasta sauce (any)
  • 1/2 cup bread crumbs
  • 1/4 cup parmesan cheese
  • 1/8 tsp dried oregano
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded Buholzer Brothers Muenster cheese
  • FILLING:
  • 2 slices Buholzer Brothers Muenster cheese
  • 1 8oz pkg cream cheese
  • fresh basil leaves

TOTAL TIME: 1 HOUR 55 MINUTES

 

COOK TIME: 35 MINUTES

SERVINGS: 4-6

  1. Pound each chicken breast thin in a large zip lock bag.
  2. Cut the cream cheese in half and then slice each half in half again. You should end up with four pieces of cream cheese. Slightly flatten each piece of cream cheese and place it down the center of each chicken breast.
  3. Then top with basil leaves and cut one slice of muenster cheese in half and place that on top of the basil. Roll the chicken starting from the smallest end of the chicken breast and repeat with the other piece of chicken.
  4. Cut each rolled piece of chicken breast in half and set aside.
  5. Arrange three bowls. Into one bowl combine the breadcrumbs, parmesan cheese, salt, pepper, and oregano. In another bowl combine the flour and cornstarch. In the last bowl whisk the eggs together.
  6. Dip each rolled piece of chicken into the flour mixture, then into the egg mixture, and ending with the breadcrumb mixture. Place dredged chicken pieces on a large plate and freeze for at least 1 hour.
  7. Remove the chicken from the freezer.
  8. In a large cast iron pot heat 1 cup of oil over med heat for about 5 min. Sear all sides of the chicken rollups and transfer onto paper towels to cool.
  9. Preheat oven to 375 degrees F. Place seared chicken into an oven-safe casserole dish. Pour 1 (24 oz) can of your favorite pasta sauce and 1/2 a cup of water over the chicken. Sprinkle with the shredded mozzarella and muenster cheese and bake for 30-45 min covered (or until meat is cooked through). Depending on the thickness of the meat, the baking time may vary.

Dark Chocolate and Gouda Pastry Puff- Gouda

  • 1 box Frozen Puff Pastry (17.3 Ounce Size)
  • 6 oz Buholzer Brothers Gouda cheese, Cut Into 12 Pieces
  • 1 bar Good Quality Dark Chocolate, Divided Into 12 Squares (3.5 Ounce Bar)
  • 1 whole Egg
  • 1 Tablespoon Water
  • Sea Salt And Raw Sugar, As Desired, To Sprinkle Over Top
  • Slivered Almonds, As Desired To Sprinkle Over Top
  1. Preheat oven to 375 F. Line two cookie sheets with parchment paper.
  2. Thaw puff pastry for 30 minutes. Remove it from packaging and slice each sheet into 12 even-sized squares (do this by cutting along the 3 fold lines, then cutting each of those strips into 4 even pieces).
  3. Place 6 pieces of pastry on each cookie sheet, a few inches apart. Place 1 piece of cheese onto the center of each piece of pastry. Top with one square of chocolate per pastry piece. Top with another piece of puff pastry, and seal the edges together with a fork.
  4. In a small dish, whisk together the egg and water. Evenly brush this egg wash over the pastry squares (12 total). Sprinkle with almonds, and either sea salt or raw sugar.
  5. Bake in the preheated oven for 14-20 minutes, or until puffy and golden brown. Remove pan from oven. Cool them for a few minutes before serving. Filling will be hot!

Dill Havarti Scalloped Potatoes- Dill Havarti

  • 4 whole Yukon Gold Potatoes, Sliced 1/4 Inch Thin
  • 1 pinch Salt
  • 1 dash Pepper
  • 3 Tablespoons Butter
  • 3 Tablespoons All-purpose Flour
  • ½ teaspoons Salt
  • 2 cups Milk
  • 1-½ cup Buholzer Brothers Dill Havarti Cheese, shredded
  • 1 cup Vermont White Sharp Cheddar Cheese, Shredded, Divided

PREP TIME: 10 MINUTES

COOK TIME: 1 HOUR 20 MINUTES

SERVING:  4

  1. Preheat oven to 400 F. Butter a 13×9 casserole dish.
  2. Layer 1/2 of the potatoes into the bottom of the prepared casserole dish. Season with salt and pepper to taste and add the remaining potatoes.
  3. In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened.
  4. Stir in the dill Havarti cheese and 1/2 cup of Vermont cheddar all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese sauce over the potatoes and top with the remaining Vermont cheddar. Cover the dish with aluminum foil.
  5. Bake for 1 hour covered, then remove the foil. (Be very careful when you remove the foil! Hot steam will be released.) Bake uncovered for another 15-20 minutes until lightly browned and bubbly.

Brick Pizza Bites- Brick

  • ¾ cup marinara sauce (save the rest for the dipping sauce)
  • Mini pepperoni
  • ½ cup Buholzer Brothers Brick cheese, shredded
  • 1 Egg
  • Italian seasoning
  1. Preheat oven to 350 degrees.
  2. Place pie crust in ice tray.
  3. Push the crust into each cube.
  4. Place filling in each pocket.
  5. Place second pie crust over ice tray.
  6. Press crust down to seal.
  7. Flip ice tray onto cutting board.
  8. Cut out bites with pizza cutter, brush each bite with egg wash top with ither Italian seasoning.

Cheesy Havarti Tater Tots- Havarti

  • 4 medium potatoes about 1 ½ lbs/6, peeled
  • 1/2 cup sharp cheddar cheese or pepper jack cheese, shredded
  • 1/2 cup Buholzer Brothers plain Havarti, shredded
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2-3 tablespoons melted butter OR vegetable oil for frying
  1. Cut the potatoes in half and place them in a pot filled with cold water. Add 1 tablespoon of salt and bring it to a boil, over medium high heat. Reduce the heat to medium low and simmer for 8-10 minutes, or until just fork tender, but not falling apart. Drain the hot water and add cold water. Let it cool for about 30 minutes.
  2. Grate the potatoes when they’re nice and cool to touch. You’ll get about 4 cups of grated potatoes.
  3. In a large bowl, combine grated potatoes, cheese and flour and mix until well combined.
  4. Salt and pepper to taste. (I added about ½ teaspoon of each salt and pepper.) Feel free to add other seasonings, like dried herbs, paprika, garlic powder, cayenne pepper.
  5. Using a 1.5-tablespoon ice cream scoop, divide the potatoes mixture into equal sized balls. Form the balls into small cylinders, classic tater tot shape. (TIP: wet your hands slightly so that the mixture doesn’t stick to your hands.)
  6. Baking instructions: Arrange tater tots on 2 baking sheets lined with parchment paper, or silicone mat. Brush on melted butter on each tater tot. Bake at 425°F (220°C) for 25-30 minutes, or until nice and golden.
  7. Frying instructions: In a skillet, heat half an inch of vegetable, or canola oil until sizzling. Fry the tater tots a few at a time until nice and golden brown. Removed onto a plate lined with paper towel.
