- 8 eggs
- 1 tbsp milk
- 1 (16oz) bag frozen hash browns potatoes, thawed
- 1 16oz pkg pork sausage roll, cooked
- 1½ cups (6 oz. pkg) Buholzer Brothers gouda cheese, shredded, divided
- 1 tsp dried oregano (or 1 tbsp fresh)
- 1½ tsp salt
- 1¼ tsp pepper
1.Preheat oven to400°. Coat a12 cup muffin pan with non-stick cooking spray.
2.In a medium bowl, whisk together eggs and milk to combine.
3.In a large bowl, combine potatoes, sausage, 1 cup of gouda cheese, oregano, salt and pepper.
4.Divide sausage and cheese mixture evenly among the muffin cups. Slowly pour egg mixture into each cup (cups will be full). Top with remaining ½ cup gouda cheese.
5.Bake 20-25 minutes or until puffed and lightly browned. Remove and let cool 5-10 minutes in pan before loosening sides and removing from pan. Serve warm.
